Throughout an already long career and after 18 years in the Etxanobe restaurant, we have proposed that La Despensa del Etxanobe be the means to make Basque cuisine more accessible. Neither more nor less, the maximum expression of that great Basque cuisine through the freshest fish, the tastiest meats, slow and full flavors that are the essence of a tradition that we update from a deep respect.
Fernando Canales and Mikel Población bring to the center of Bilbao the dishes that made the Etxanobe a gastronomic reference in Bilbao: the kokotxas, cod pil pil, fried hake, that great fish soup or our famous anchovy lasagna are prepared with the same passion and degree of excellence in La Despensa de Etxanobe. Dear Customers and Friends,
Both La Despensa and Atelier Etxanobe will be closed for summer holidays from July 19 to August 9, 2026 (inclusive)—a break that, after the intense months we have experienced, will be more than welcome.
From August 10 onwards, we will be refreshed and ready to welcome everyone who chooses Etxanobe for a premier dining experience. Until then, we wish you all a wonderful summer.
