Throughout an already long career and after 18 years in the Etxanobe restaurant, we have proposed that La Despensa del Etxanobe be the means to make Basque cuisine more accessible. Neither more nor less, the maximum expression of that great Basque cuisine through the freshest fish, the tastiest meats, slow and full flavors that are the essence of a tradition that we update from a deep respect.
